Dessert ideas for Christmas menus

Trays loaded with Christmas sweets are common to accompany the evening toasts and after-dinner Christmas lunches and dinners. But to finish the menus offered during these holidays, it is better to end with Christmas desserts, not directly serving the nougat, mantecados and Polvorones Freeze dried candy for sale.

In this report we point out some ideas for Christmas dessert recipes to finish the Christmas dinner and lunch menus . Recipes that you can make with nougat; lighter ideas with fruit; and easy-to-make and colorful desserts served in glasses or cups. We have extracted the desserts from those shared by the different friends of facilisimo.com in the Cooking communities and blogs.

Desserts with nougat
Some nougats, especially Jijona and Yema, allow you to make Christmas desserts with them. Nothing like Christmas dinners and meals to serve a dessert made with this sweet.

Yolk nougat cake with Thermomix (Recipe and image from our friend Iratxed )
Ingredients: 1 stick of yolk nougat, 2 eggs, 50 g of sugar, 400 ml of whipped cream (milk cream), 100 ml of milk, 6 leaves of gelatin, a splash of cognac, brown sugar
Ingredients for the base: cognac, 150 g of butter and 30 Neapolitan cookies.

Preparation:
We make the base by crushing the cookies with the creamy butter and a splash of cognac. We do it with a couple of turbo boosts. We add the crushed cookies to the bottom of the mold and make an even layer. We put it in the refrigerator.

We start to hydrate the gelatin sheets. We whip the egg whites , programming 4 minutes at 37º and speed 3 1/2. We program 4 minutes again at the same speed but without temperature. We take out and reserve. We chop the nougat with a few turbo strokes, add the yolks, milk, sugar, a splash of cognac and mix at speed 3 1/2 at 37º for about 4 minutes. We add the hydrated gelatin and mix at speed 4, 10 seconds.

We take the mixture out of the Thermomix glass , wait for it to cool and carefully mix the cream and then the whipped egg whites, making sure to make circular movements so that neither the cream nor the egg whites are lowered. We pour the mixture over the cookie base and put it back in the refrigerator. Moments before serving, sprinkle with brown sugar and caramelize with a blowtorch.

Desserts with fruit
So that our diners do not end up very bloated, we can choose to offer a lighter dessert in which the fruit can be the protagonist.

Fruit salad bagel (Recipe and image from Alquimia )

Ingredients: 1 orange, 1 pear, 1 apple, 1 banana, some strawberries, 2 kiwis, 1 sachet of 4 g of pronagar ( agar-agar ), 3 tablespoons of sugar and 1/2 liter of water.

Preparation:
We peel and cut the fruit. In a bowl we put 1/2 liter of water and boil it with a few tablespoons of sugar. We add the agar agar and stir without reaching a strong boil. We put the fruits in the mold and add the water with the agar and sugar. Then we let it cool in the refrigerator. After a few hours it is unmolded.

Creamy desserts in glasses and cups
Mixing some creamy dairy products such as yogurts, mousses, custards, etc. With other ingredients , we can compose very original desserts that are very attractive served in glasses or cups .

Ingredients: various fruit in syrup (grape, pineapple, pear, peach), 2 vanilla Greek yogurts (or a Greek yogurt with a little vanilla essence), a piece of cake or a couple of muffins and cinnamon powder.

Preparation:
In a glass we put a little crumbled cake on the base. In a bowl, beat the yogurt with a little of the fruit syrup with a spoon. We add the yogurt on top of the cake and finally we add a couple of tablespoons of fruit sprinkled with cinnamon. If we leave it in the refrigerator for a few minutes before eating, it will be tastier.
